Lauren CA asked:
I will soon have:
cucumbers
tomatoes
cherry tomatoes
red peppers
onions
squash
cantaloupe
muskmelon
peas
What should I do with all of this? I’m sure I’ll eat most of it raw, but I’d like to look into canning. Do you just can the individual vegetables or do you combine them into something like salsa? What are your favorites? What kinds of things do you think I could make with what I’ll have?

When I was young, my mom canned tomatoe soup. It was great hot or cold and if I had all those things coming out of my garden, that’s what I would be making – for sure.
Last year I mixed several varieties of tomatoes, some pepper, and onion, as well as a little oregano, and basil to make my own tomato/spaghetti sauce. I put up about 60 qts. Keep in mind, some of your produce is low acid and you should use a pressure canner for that. Tomatoes can be done with a water bath canner. Cucumbers can also be pickled and canned. The vinegar allows you to water bath those as well. Pick and process them young before the seeds inside get too large
